Is there anyway to go back to the older version before this horrible new update came out (7.0) I don't like the look and how my phone functions after the update

It depends on whether or not the Bootloader version has changed.. If it hasn't, you could download the CORRECT version of One UI V6.1.1 for your device, and Flash it with Odin. 

But, you will be missing the Security Patch Updates, and eventually, you will be forced to update... unless you use adb to disable the Update "software".. (there's a proper term for it, but I can't think of it at the moment). 

If there's been a Bootloader update, then, no you can NOT revert to the previous version.

I'd suggest that you try to get used to One UI V7.0..

Not sure what could be such a big change that you would be wanting to go back to One UI 6.1.1

I have my phone set up and working exactly the same as it used to before One UI 7

I think it's genuinely just the way it looks. I liked the old one better and this one just makes me feel uncomfortable. Like I don't like the way I scroll thru my apps, the upper bar is super weird and too bubbly, my clock is nasty, and then some. Its just the way it looks, I really don't like it

Change the app drawer to custom to get horizontal scrolling over vertical. Only issue is it won't be alphabetical and you need to spend time sorting it.

In regards to looks... not much can be done but to get accustomed to it. If you really hate the battery icon, you can remove it with Good Lock. Just need to find an app or widget that can display the battery as a replacement.
