Galaxy SHi Pinky183, we appreciate your efforts in performing all the necessary troubleshooting steps including factory reset.
However, the Wi-Fi issue is not resolved yet you might need to get the device examined by the service technician to know the root cause of the issue and get it fixed.

Galaxy SApparently it may well be an issue, but I don't think that it's specifically related One UI V5.1.
The issue doesn't seem to affect everyone, but for those who do have the problem, disabling WiFi-6 on the Router and just using WiFi 5Ghz seems to solve the problem, until Samsung releases a fix for it... again.

Galaxy SSome others with your device have reported an issue with WiFi6.
If you are using WiFi6, there's no point in visiting a Samsung Service Centre.

Galaxy SHave you tried just unplugging & plugging the Router back in?
You could also try Resetting your Network Settings.
Go to Settings and Search for "Reset" & Reset Network Settings & Reboot.
You'll need to know your passwords as they will be cleared.
