Galaxy SGo to Settings > Apps Search for YouTube & Click on it > Scroll down to Storage & Clear Both Cache Data for the app & Reboot.

Galaxy SIt's probably working, because you cleared the app's Cache & Data.
Generally, if an app won't open, that's the first thing to do, and usually it's the solution.
