Re-pair the Devices: Unpair your watch from your phone via the Galaxy Wearable app, then pair them again. This can sometimes resolve syncing glitches.
Battery Optimization Settings: On your S25 Ultra, go to Settings > Apps > Samsung Health, and ensure battery optimization is turned off for the app. This prevents the system from restricting background syncing.
Samsung Health App Settings: Open the Samsung Health app on your phone, navigate to the Sleep section, and check if detailed sleep tracking is enabled. Also, ensure that the watch is selected as the primary device for sleep tracking.

WearablesIve done everything you mentioned and it has not fixed the issue. Also, when I open Sleep on the watch it will only display the sleep time. A loading icon will spin but will not load any other information.

Unfortunately, I have the same problem as Matt.
I have a Watch 7 40 mm Bluetooth version, and a Galaxy S22.
I got my Watch7 a couple days ago. The first night, the watch recorded my sleep data and transferred it to the phone for me to review in the morning - all great. Tonight, it recorded the sleep time at least, but no data shows up on the phone. Other metrics (e.g. steps that the watch tracks, and calories that I enter on the phone) keep syncing between watch and phone no problem.
On the phone, none of the sleep data has been transferred, and the 'energy score' is not calculating (I am assuming because it lacks the sleep data it needs).
On the watch, if I open sleep data, it displays the sleep time, and the loading icon spins under it the same way as in Matt's photo. Also, 'energy score' is not populated - I am guessing that's because the phone calculates it and sends back to the watch, but I might be wrong there.
The only thing that changed between night 1 and night 2 is that for the first night, I had blood oxygen levels and skin temperature tracking on, just to try it out. For the second night, I turned off blood oxygen levels, but kept skin temperature tracking. All other parameters that I can think of stayed the same between night 1 and night 2.
I have:
- tried to force sync the data by swiping down in Samsung Health app (it shows 'last synced' - and the correct timestamp, but no data shows up)
- turned blood oxygen levels tracking back on, and did a force sync - it was syncing for a noticeably longer time, but with the same negative result
- turned off battery optimization for the Samsung Health app
- restarted both watch and phone
- uninstalled and re-installed Samsung Health
- did the cache partition wipe from Tallman's comment
- unpaired and reconnected watch and phone
- did a reset on the watch (and a restore from the backup on my phone).
For this last one, I was trying to 'transfer the watch to new phone' to reconnect phone and watch after unpairing them - it kept throwing errors being not able to connect, multiple times, and at some point I must have accidentally tapped 'reset' instead of 'transfer'. I am assuming this was the factory reset, as I had to go through the full set up, as I did when I first got the watch, to reconnect to the phone.
What I didn't expect though is that the sleep data from night 2, which supposedly wasn't transferred to the phone, is still displaying on the watch right now, after that reset. So either the reset didn't wipe the watch data, or that sleep data was somehow included in the backup.
The only thing I haven't done yet is a factory reset without restore from backup. Is there anything else I can do before I try that?

WearablesAfter doing everything mentioned by the others that replied, my watch is working perfectly without any issues now. I did a reset with the backup.
