That's not Samsung that controls that, but your carrier and mobile standards. Unless you mean the font color only on your device.
Because right now, this is Rich Text functionalities you are asking for. RCS does bring some of these features, but you need your carrier to support it (Bell, Rogers and Fido only) and your recipient(s) to have a RCS-compliant carrier and device (Which is any Samsung with Marshmallow or more)

There are apps like messenger and a few other apps that have the feature to change text font color. However they all have the annoying ads in them. An update of our messages app that came with our device, I'm trying to get for everyone. Boring plain white font color is to plain for me.

Ah, this is TOTALLY different. In that case the standard Email app has this option, but like Messenger, uses your data.
TEXTING is SMS. This is a whole other world (and is free/unlimited unlike Messenger).
Next time, refer to Messenger as Instant Messaging, not Texting, simply because it's not Texting.

I'm a huge fan of Textra, which will let you customize your look, and also give you the option to customize individual conversations. I've tried a few (Handcent, Chomp, and a few more), and most third-party texting apps give you lots of customization options. Find one that works for you.
